Brew Recipe:
Dose: 18-19 grams
Volume: 50mL
Temperature: 94-94.5 degrees Celsius
Brew time: 28-30 seconds
Brew weight: 28-32 grams
Water Quality: 240ppm

This recipe was developed on a Nuova Simonelli Mac 2000. We highly recommend the use of VST 18g baskets.

Methodology:
Wipe the filter basket clean and dry.
Tamp lightly without tapping.
Purge group for 2 seconds.
Insert filter handle and start the brew cycle within 2 seconds.
Remove cup immediately after brew cycle has completed.
Serve as soon as possible.

Moka Pot / Stove Top

Brew Recipe:
Dose: 16-17 grams
Volume: 200mL
Temperature: 94-94.5 degrees Celsius
Brew time: 4 minutes
Water Quality: 140ppm

Methodology:

Pre-boil the water. While this is happening, pack the coffee grounds into the filter and apply a little pressure with your fingers while packing. Wrap the bottom of the moka pot with a tea towel and fill with water to just below the safety relief valve. Place the filter in and screw the top on firmly. After putting the brewer on the stove, start with a medium high heat level, increase heat slowly every 30 seconds. Open the lid and watch for the first drops of liquid. When you see the fist drops, slowly reduce the heat to medium low and close the lid. After around 4 minutes, the coffee begins to over-extract and should be removed from the heat and served.

V60, Woodneck and Pour-over Coffee

Brew Recipe:
Dose: 15 grams
Volume: 250mL
Temperature: 94-94.5 degrees Celsius
Brew time: 2:10 minutes
Water Quality: 140ppm

Methodology:
Preheat & pre-wet the filter and serving container.
Grind coffee, place into filter & settle the grounds flat.
Make an indentation into the middle of the grounds with the stirrer.

Pour 30g water & wait 30 seconds.
Pour at a slow, constant speed and use a circular motion to reach the following times and weights:

1 min – 110g
1:30 min – 200g
1:45 min – 250g

2:10 min – finishing time

Try to pour at a consistent speed, as this will affect the pressure and turbulence inside the brewer.

Clever Coffee Dripper & Handy Brewer

Brew Recipe:
Dose: 15 grams per 250mL water
Temperature: 94-94.5 degrees Celsius
Brew time: 4 minutes
Water Quality: 140ppm

Methodology:

Preheat the brewer, grind coffee and pour 100mL, lightly stir, ensuring all coffee is wet. Then pour the remaining water and close the lid. Simply place on a mug to finish the brew.

French Press / Plunger

Brew Recipe:
Dose: 15 grams per 250mL water
Temperature: 94-94.5 degrees Celsius
Brew time: 4 minutes
Water Quality: 140ppm

Methodology:

Preheat the brewer, grind coffee and pour 100mL, lightly stir, ensuring all coffee is wet. Then pour the remaining water and place the plunger filter into the top of the brewer, to help reduce the escaping heat. Plunge slowly after 3:45 minutes and pour gently.
