Red apple acidity with notes of raw honey, praline, maple syrup and orange. An clean, well balanced Bourbon with plenty of body. Best at medium to light roast, great for espresso.
This is our second season working with this estate and its magnificent coffees. The Finca Pancum sits in the beautiful Pochuta micro region of Chimaltenango located to the West of Guatemala City, very close to the famous Lake Atitlan.
The owner Dariush Echeverria, is a fifth generation coffee grower and producer. His family currently have 4 plantations in the areas around Lake Atitlan. The original processing facility was founded in 1876 by Mr. Carlos Herrera, ex president of Guatemala and Great-Great Grandfather of the current owner Dariush Echeverria, now a fifth generation grower. Dariush is passionate about quality, sustainability and family heritage. The estate is beautifully forested with native tree species, the coffee is 100% shade grown.
This a fully washed lot with dry fermentation. During harvest, ripe cherries are picked, immature green cherry is either hand sorted and mechanically removed. Once sorted, only prime red cherry is sent to pulpers. Pulped parchment is then fermented for 24-72 hours (depending on the weather) using the dry fermentation process. Afterwards the clean, washed parchment is sent for drying.
